Egg, Ham, and 3 Cheese Breakfast Burritos with Papaya Mango Salsa
Ingredients

For Salsa:

6 (ripe) Papaya, Peeled, seeded, diced
10 (ripe) Mango, Peeled, seeded, diced
1/2 cup Red Bell Pepper, finely diced
5 large Jalapeno, Seeded, finely minced
3/4 cup Fresh Cilantro, chopped
1/2 cup Orange Juice
3 Tbsp. Lime Juice (from fresh limes)
3 Tbsp. Lemon Juice (from fresh lemons)

Egg, Ham, and 3 Cheese Breakfast Burrito
Directions

24 Breakfast Burritos:
Place breakfast burritos in sheet pans, lightly brush with oil, cover loosely with foil and bake in convection oven set at 325°F for 15-25 minutes from thawed, or 20-25 minutes from frozen.

Salsa:
Mix all ingredients well and refrigerate for at least 2 hours before service.

Serve 1 breakfast burrito with 6 ounces of fruit salsa.
