Lemon Meringue Bars

Prepare meringue while bars are baking. Place 1 lb. of egg whites and 1½ tsp. cream of tartar into mixer bowl. Mix on medium speed using a whip attachment until soft peaks form. Add 2 cups (1 lb.) of sugar and 1 tsp. salt gradually. Beat until meringue holds a medium stiff peak. Spread meringue on baked lemon bar completely to edges of pan. Brown in 375°F Standard Oven* for 10-12 minutes or until desired golden brown color is achieved. *Convection oven not recommended for meringue. YIELD: 64- 2 x 3 inch servings. |
