pita bread - medium/large
2-1/2 lbs. Patuxent FarmsŪ 4 Diamond Just Perfect Peppered S/L
Turkey Breast
3 cups Marinated Tomato, Onion, and Cucumber
12 oz. Feta Cheese, Crumbled
1. Thinly slice the turkey breast and set aside.
2. Place the pita bread on a 350° grill. Heat each side 30
seconds to soften. Do not brown the pita.
3. Remove the bread from the grill. Lay 3 oz. of turkey on
each pita bread, add 1/4 cup of the tomato mixture to each pita.
4. Sprinkle each sandwich with 1 oz. of feta cheese.
5. Roll the pita around the filling; secure one end
of the pita with a wooden pick or wrap with the foil sandwich paper.
6. Serve immediately.
Marinated Tomato, Onion and
Cucumber
1 cup Fresh, Chopped Tomato
1 cup Peeled, Chopped Cucumber
6 tbsp. Chopped Red Onion
6 tbsp. Red Wine Vinegar
3 tsp. Oregano, Dried Leaf

1. Combine tomato, cucumber and red
onion with the vinegar, olive oil and oregano.
2. Let stand for 15 - 20 minutes before using.
Yield: 10 servings
